Trail Distilling is the first legal distillery in Oregon City, a town known as the final stop on the Oregon Trail. Operated by a husband and wife team, this woman and veteran-owned establishment is a popular destination in the area. You can book a tour and tasting on their website. Trail Distilling’s spirits have been carefully crafted with quality ingredients and a custom distilling process. The company currently has two brands including First City and Trillium. Both lines are inspired by the distillery’s location. First City is a nod to Oregon City, the end of the Oregon Trail. Trillium is a nod to the protected trillium flower that blooms in Oregon’s Mt. Hood Territory.

The exciting part of touring the facility is stepping behind the curtain to explore the facility where the spirits are made. You’ll meet your group in the main room by the bar, then walk together to the back. Wear closed toed shoes and be prepared to take some pictures.

Once the tasting begins, the owner will share some history about distilling in general and the distillery you’re in. Feel free to ask questions as you go. The host has a wealth of knowledge.

You’ll have a chance to try each of their spirits one by one, while you have a conversation about it. Water is provided to “cut” the spirit and “open up” the flavors. You don’t have to finish the entire sample if you don’t want to.

Distilling is a science and an art. There are different distilling contraptions that can be used depending on your goals.
