First with the Small Plates! Here we have Unsworth Chowder using Vancouver Island seafood, Pan Seared Scallops with sweet pea, lemon, bacon, fruit preserve, and Crispy Pork Belly with creamed corn, apple butter, sherry gastrique.

Next we have the Large Plates! Presenting the Haida Gwaii Halibut with braised greens, crispy quinoa, charred tomato emulsion, basil, olive powder which is paired with 2020 Sauvignette. Sauvignette has an unique texture due to French oak barrel fermentation and aging with aromas of grapefruit and ripe citrus. The other plate seen here is Sterling Silver Steak 10z striploin with boursin mash, seasonal vegetables, symphony jus which is paired with 2020 Symphony. Symphony is an unique style of wine to the island which is ripe and full bodied with wild berries, currants, dried tobacco, and notes of coastal forests.
